Raw Materials: Molasses vs. Cane Juice

To understand Rum, one must first distinguish between the two main raw material styles:

  • Molasses: Most Rum (such as British and Spanish styles) is made from this. Molasses is a byproduct of sugar production, concentrating high levels of sugar and minerals. Spirits distilled from this typically feature notes of toffee, caramel, dark fruit, and spices. Classic representatives include Foursquare and Hampden.
  • Fresh Sugar Cane Juice: Mainly found in French-style regions (such as Martinique), known as Rhum Agricole. This spirit must be fermented from juice extracted shortly after the cane is harvested, resulting in strong terroir characteristics—grass, fresh flowers, olives, and the original sweetness of the cane. Rhum J.M is a leader in this style.

Jamaica: The Holy Land of High Ester and Funk

Jamaican Rum is world-famous for its signature 'Funk' (also known as Hogo). This flavor comes from extremely long fermentation (sometimes weeks) and the use of 'Dunder' and 'Muck' to cultivate wild yeast. This produces high concentrations of esters, bringing wild aromas of overripe banana, pineapple, nail polish, and even rubber.

1. Hampden Estate

Often called the 'Ardbeg of the Rum world'. Hampden insists on wild fermentation and copper pot stills, with no added sugar or coloring. Its high-ester expressions are explosive in flavor and a favorite for advanced drinkers.

2. Worthy Park

Worthy Park is one of the oldest surviving Jamaican distilleries, with a history as a single estate dating back to 1670. As a 'Single Estate', they grow their own cane and produce their own molasses. Their style is rounder than Hampden, showcasing a sweet balance of banana, vanilla, and tropical fruits.


Barbados: The Birthplace of Rum

Barbados is considered the birthplace of Rum. The style here emphasizes 'balance and elegance', usually blending spirits from pot and column stills.

Foursquare — The Modern Benchmark

Led by legendary Master Distiller Richard Seale, Foursquare has been dubbed the 'Pappy Van Winkle of the Caribbean'. The brand strictly opposes added sugar and flavorings, focusing on pure cask maturation. Its ECS (Exceptional Cask Selection) series is highly coveted by collectors.

Trinidad: Lost Legends and Industrial Giants

Trinidad once housed dozens of distilleries, but today only TDL (Trinidad Distillers Ltd / Angostura) remains. However, it was home to a legend—the closed Caroni.

Caroni — Legendary Heavy Rum

Closed in 2003, Caroni is the holy grail for collectors, rediscovered and popularized by Italian bottler Velier. It is known for its 'Heavy Rum' style—thick, with notes of petrol, tar, leather, and smoke. Every remaining bottle of Caroni is a piece of liquid history.

TDL (Trinidad Distillers Ltd)

TDL produces a lighter, softer, and creamier Rum style, often selected by independent bottlers (IB) for its surprising aging potential and value.


Martinique & Indian Ocean

Beyond the Caribbean, French-style and Indian Ocean islands produce highly distinctive Rum.

Rhum J.M — AOC at the Foot of a Volcano

Located at the foot of Mt. Pelée in Martinique, Rhum J.M strictly adheres to AOC regulations. Its red-cap series showcases the purity of cane juice and the minerality of volcanic soil, offering a fresh, herbal palate that is a textbook for Agricole.

Savanna — The Wild Side of Reunion Island

Savanna from Reunion Island is famous for its diversity. Its Grand Arôme (high ester) series, featuring extra-long fermentation, has highly concentrated flavors with notes of olives, fermented fruit, and sea spray umami.

Penny Blue — Mauritius Single Estate

From Mauritius' oldest Medine Distillery, Penny Blue emphasizes tropical aging entirely on the island. The spirit displays rich wood spice and tropical dried fruit flavors and is non-chill filtered.


Memories of Navy Rum

Black Tot Day (July 31, 1970) was the final day the British Royal Navy issued its Rum ration. The Black Tot brand is dedicated to recreating this historic flavor by blending heavy spirits from Guyana, Barbados, and Jamaica, resulting in rich chocolate, coffee, and black treacle notes—a true tribute to naval history.
