Mash指最初發酵產生酒精的穀物、水和酵母的混合物。
而酒標上寫的Sour Mash是指連續蒸餾完成後, 從蒸餾器底部將穀物殘渣清理出來, 當中包括穀類, 及偏酸性液體，並於在下一Batch發酵時再投放。主要目的平衡發酵槽的酸鹼值, 讓酵母菌更有效率工作, 從而令每一Batch酒的風味盡量一致。
