Ireland's new distillery Waterford previously launched Bannow Island and Ballykilcavan 1.1 versions, which sold out shortly after release. This was especially true after it was hyped up even more when it received 88 points from WF at the young age of 3 years.
Recently, this Irish distillery that plays with "terroir" has launched the Bannow Island and Ballykilcavan 1.2 versions. Compared to the 1.1 version, they are matured for over 3 more months. Frankly, after tasting them, I didn't find any significant difference between 1.1 and 1.2. Therefore, personally, if you like it, you can refer to Serge's tasting notes for 1.1. Friends who missed out on 1.1 can also consider it.
P.S. Each bottle box has a Terrior Code on the back. Enter the code on their website for detailed information, such as the number of casks used (including each cask's type, liters filled, start date), yeast used, fermentation duration, soil type beneath the field, depth, and daily sunlight hours, etc. You might not be interested in this CLS information! 😆
