The new Irish distillery Waterford previously released the Bannow Island and Ballykilcavan 1.1 versions, which sold out almost immediately. This was especially true after it scored 88 points at WF despite being a young 3-year-old whisky, leading to exaggerated hype.
Recently, this Irish distillery, which focuses on 'terroir,' has released the Bannow Island and Ballykilcavan 1.2 versions, which have matured for over 3 more months compared to the 1.1 release. To be honest, after tasting them, I didn't find a huge, obvious difference between the 1.1 and 1.2. So, personally, if you liked the previous one, you can refer to Serge's Tasting Notes for the 1.1, and friends who missed out on the 1.1 should definitely consider this one.
P.S. Each bottle has a Terroir Code on the back. If you enter this code on their website, you will find very detailed information, such as how many casks were used (including the type of each cask, how many liters it held, and the filling date), which yeast was used, fermentation duration, the type of soil beneath the field, its depth, how many hours of sunlight per day, etc. You might not be interested in this 'insane' level of data!😆

Nose:
Malty, ripe pears, raisins, floral, lemons, warm vanilla custard, pink lady apples, marzipan
Taste:
Fruity, honey, caramel, malted biscuits, hit of spice heat, toffee popcorn, lemon drizzle cake.
Finish:
Long lasting oiliness with a spicy heat that turns dry.
