Legendary Distiller Billy Walker Pushes Limits: Deciphering the Depth of Half-Century Solera Sherry Casks

The GlenAllachie Distillery has officially released the second expression in its Masters of Wood series, a 19-year-old Single Malt Scotch Whisky. This series is designed to showcase the distillery's rarest and most unique wood assets. The series' first release, 17yo Mizunara Virgin Oak and Oloroso Sherry Cask Matured, was named Best Speyside Single Malt (13-20 Years) at the World Whiskies Awards 2024, demonstrating the distillery's excellence in wood management.

The Rare Art of 55-Year Solera Cask Aging

The focus of this new release is the use of extremely rare ex-solera sherry casks. Master Distiller Billy Walker personally selected Pedro Ximénez and Oloroso sherry casks that had been active in a Spanish bodega's Solera system for over 55 years. Because the Solera system relies on a continuous cycle of mixing old and new liquids, casks are rarely removed, making them exceptionally difficult to obtain. This rare environment infuses the liquid with unparalleled depth of flavor, marking one of the most iconic projects in Billy Walker’s career.

Maturation Details: Natural Color at 50% ABV

Regarding maturation details, the spirit was first aged in American oak ex-bourbon barrels before being transferred to Solera sherry casks for secondary maturation. The Pedro Ximénez casks impart sweetness of figs and molasses, while the Oloroso casks contribute layers of walnut and dark chocolate. The whisky is bottled at 50% ABV, non-chill filtered, and retains its natural color. The packaging features a deep Merlot red hue with hand-drawn illustrations detailing the Solera system, serving as a tribute to the history of traditional Spanish sherry cask aging.
