Palo Cortado: An Elegant and Full-Bodied Rare Cask Maturation
The production of Palo Cortado is unique; it begins as a Fino but, after fortification and the loss of flor, moves toward oxidative aging. It combines the delicate aroma of Amontillado with the full-bodied nature of Oloroso. This 11-year-old whisky utilizes these rare casks to create layers ranging from sweetness to nuttiness while retaining the distillery’s signature character, demonstrating peak craftsmanship.
Master Billy Walker’s Cask Management Expertise
Master Distiller Billy Walker noted that this release combines signature heather honey notes with the complex aromas of Palo Cortado, featuring berries, dark mocha, and cinnamon spice with subtle depth. He emphasized that extended secondary maturation allows the sherry characteristics to be fully released, offering a breadth of flavor beyond expectations. This expression not only sparks curiosity but showcases his mastery in wood management.
Bottled at 48% ABV, this whisky remains natural in color and non-chill filtered. The spirit was first matured in Bourbon barrels before being transferred to Sherry butts selected from partner cellars in Cádiz, Spain. Since 2017, the distillery has earned global acclaim for its cask management under Billy Walker's leadership. With this new addition, the series now comprises four releases, rolling out to global markets in the coming weeks.
