'Rich Cacao', the first release in Macallan's The Harmony Collection, was co-developed by Whisky Maker Polly Logan and Jordi Roca, the pastry chef of three-Michelin-starred restaurant El Celler de Can Roca. Matured in a combination of European and American oak sherry-seasoned casks, this whisky was crafted to find the perfect chocolate pairings. Beyond the liquid, it serves as a tribute to sustainability, with packaging made from discarded cacao husks, reflecting respect for the environment and innovation.

The Harmony Collection is a new annual limited series focused on exploring the connection between whisky, nature, and various craft disciplines. Rich Cacao, the inaugural release, was inspired by world-renowned pastry chef Jordi Roca's passion for cacao. Macallan Whisky Maker Polly Logan visited Spain to understand the production process and flavor profiles of cacao, eventually selecting specific casks with distinct dark chocolate characteristics from the Speyside warehouses.
With an ideal 44% ABV, Rich Cacao balances smooth chocolate notes with rich dried fruit sweetness. It is a rare treasure for those who love sherry-cask styles and sophisticated dessert-like profiles.
