The new Irish distillery Waterford previously launched Bannow Island and Ballykilcavan 1.1 versions, which were snapped up shortly after their release, especially after it received an 88-point score from WF at the young age of 3 years, leading to even more speculative trading.


Recently, this Irish distillery, which plays with "terroir", has launched the Bannow Island and Ballykilcavan 1.2 versions, which are more than 3 months mature compared to the 1.1 version. To be honest, after tasting them, I didn't find any significant differences between 1.1 and 1.2. Therefore, I personally feel that if you like it, you can refer to Serge's tasting notes for 1.1. Friends who missed out on 1.1 earlier can also consider this bottle.


P.S. On the back of each gift box, there is a Terrior Code. If you enter the code on their website, you will find very detailed information, such as the number of casks used (with details of each cask type, liters filled, start date), yeast used, fermentation duration, soil type beneath the field, depth, daily sunlight hours, etc. You might not be interested in this information, finding it to be CLS-level detail 😆

Taste-
Oily mouthfeel, white pepper, apricots, spices, toffee, maltiness, wood shavings.
