The new Irish distillery, Waterford, previously released the Bannow Island and Ballykilcavan 1.1 versions, which sold out shortly after release. This was especially true after it scored 88 points from WF at just 3 years old, leading to exaggerated hype.
Recently, this distillery, which focuses on 'terroir', has released the Bannow Island and Ballykilcavan 1.2 versions, matured for over 3 months longer than the 1.1 version. To be honest, after tasting it, I didn't notice a huge obvious difference between 1.1 and 1.2. So, personally, if you like it, you can refer to Serge's tasting notes for the 1.1, and friends who missed out on the 1.1 can also consider this bottle.
P.S. Each bottle box has a Terroir Code on the back. If you enter this code on their website, you will find very detailed information, such as how many casks were used (including cask type, volume in liters, and filling date for each cask), which yeast was used, fermentation time, the type of soil beneath the field, its depth, and the average daily sunlight hours—details you might not be interested in, but I find them incredibly detailed!😆

Official Tasting Notes Reference
Nose:
Red grapes, tilled earth, dried fruit, barn yard, cooking apples simmering in the pot, petrichor, that aroma of a forest after the first rain for days.
Taste:
Oily mouthfeel, white pepper, apricots, spices, toffee, maltiness, wood shavings.
Finish:
Dry, oily, spice, chocolate, malt that lasts.
