Mollydooker, also known as 'Lefty', is a very innovative winery in recent years. Although not large in scale, they have won countless awards and high scores.
The owners, Sarah & Sparky, previously worked as winemakers at renowned estates like Henry's Drive and Shirvington, earning the title of 'Australian Winemaker of the Year'.

Besides the unique label and high scores often achieved by their wines, Mollydooker's most special feature is their exclusive 'Mollydooker Shake'.
Most wineries inject Sulphur before bottling to protect the wine quality, but Mollydooker uses Nitrogen. This preserves the fruit aromas and reduces potential issues like Sulphur sensitivity or headaches for some drinkers.
The process is simple: After opening, pour a small glass into the first wine glass. Cap the bottle and Shake Shake Shake, then open to release some gas, cap again, and Shake Shake Shake again. Done. Pour into the second wine glass and compare the difference. The second glass, due to the shaking, releases nitrogen gas which restores the wine's fruitiness and vibrancy, softening the strong Tannins.

You might think a 2018 vintage is too young, but this wine has already achieved extremely high scores on Vivino. New World wines that emphasize fruit, especially Mollydooker which focuses on complexity within the fruit, possess a captivating appeal even when young.
