Established in 1973, the Hakushu Distillery is located at the foot of Mt. Kaikomagatake in the Southern Alps, Yamanashi Prefecture, at an altitude of approximately 700 meters. Known as one of the world's rare high-altitude forest distilleries, its cool, humid climate and lush environment provide unique natural conditions for whisky maturation.
The soul of Hakushu lies in its 'water'. The water source comes from snowmelt from Mt. Kaikomagatake, filtered through granite layers to create pure, low-hardness soft water. This water gives Hakushu its fresh, pure, and silky-smooth mouthfeel. Unlike the rich, floral fruitiness of Yamazaki, Hakushu leans towards herbal, green apple, and fresh smoky notes, earning it the title of 'Forest Whisky'.
In terms of production, Hakushu insists on using stills of various shapes and sizes and wooden fermentation vats, allowing lactic acid bacteria to create richer aromatic precursors. Hakushu NAS was created by master blenders to express the 'Hakushu Character' even as aged stocks became rare. It inherits the traditional light peat and achieves complexity through diverse cask blending. Whether for a beginner or a connoisseur, Hakushu NAS offers an experience akin to being in a verdant forest.
