The Hakushu Distillery, established in 1973, is Suntory's second distillery after Yamazaki. Seeking a water source and environment completely different from Yamazaki, Suntory chose the forest at the foot of Mt. Kaikomagatake in the Southern Alps. At an altitude of approximately 700 meters, it is one of the world's few high-altitude distilleries.
Hakushu is characterized by the soft water used in its brewing. Flowing through ancient granite rock layers, the water is exceptionally clear and pure. Furthermore, the distillery utilizes various shapes and sizes of copper pot stills and malts with varying levels of peat. This 'Tsukuriwake' (diversity in making) process allows Hakushu 12 Years Old to achieve a perfect balance between freshness and complexity. Each bottle is a precious gift from time and nature.
