Tomatin Unveils 15YO PX Sherry Single Cask (608 Bottles)
Fully Matured in First-Fill Pedro Ximénez Cask, 58.8% ABV UK Exclusive
Highland distillery Tomatin has announced the launch of a new single cask expression, the Tomatin 2011 Single Cask, released exclusively for the UK market.
This Tomatin release is a 15-year-old single malt whisky bottled at a cask strength of 58.8% ABV, strictly limited to 608 bottles. The liquid spent its entire maturation in a specially selected first-fill Pedro Ximénez sherry butt (cask number 37316). Sherry casks have played an essential role in Tomatin's whisky-making journey for over a century, as the distillery has continually sourced casks from Jerez since its founding.

First-Fill Sherry Cask Aging and Flavor Profile
On the palate, the distillery team notes an opening of candied orange peel, berry compote, alongside rich sweetness of honey and vanilla. The taste unfolds with rich dark chocolate, sultanas, and French tarte tatin, followed by a long and delicate finish brimming with warming baking spices.
Tomatin Distillery Manager Jamie Muir remarked that sherry casks are inextricably linked with the distillery's evolution. This chosen first-fill Pedro Ximénez cask provides a pronounced character, delivering rich depth from prolonged maturation while retaining Tomatin's signature soft Highland orchard fruit profile.
On-Site Cooperage Craftsmanship Recognition
Tomatin is one of only four distilleries in Scotland with an on-site cooperage. Head cooper Allan Bartlett was honored with the "Cooper of the Year" award at the Icons of Whisky Awards 2025 in recognition of his dedication and expertise in managing and maintaining the distillery's casks.
