Continuing the "Not A Finish" Series: Fully Matured in 33 First-Fill French Cognac Casks
Islay farm distillery Kilchoman has announced the release of its Cognac Cask Matured single malt whisky. Bottled at 50% ABV, this release continues the distillery's "Not A Finish" series exploring the character of full cask maturation, serving as the follow-up to the Maury Cask Matured expression.
This 2026 edition from Kilchoman marries 33 first-fill ex-Cognac barriques distilled in 2019. Unlike many industry producers who use Cognac casks merely for finishing, Kilchoman matured the spirit entirely in Cognac casks to investigate the impact of full maturation in experimental wood, allowing the French oak characteristics to develop fully throughout the entire maturation process.

Flavour Profile and Maturation Monitoring
Bright and vibrant in style, this single malt perfectly balances ripe pears, apples, candied ginger, baking spices, and maritime peat smoke. The nose offers ripe pears, apples, peat smoke, honey sweetness, toasted nuts, and baking spices; the palate reveals a buttery, rounded texture bursting with layers of baked fruit, honeycomb, and sweet-savoury depth; the finish delivers dry smoke, lingering sweetness, and soft fruit tones.
Anthony Wills, founder of Kilchoman, stated that full maturation in first-fill experimental casks carries significant risks, requiring the distillery to monitor the maturation exceptionally closely. He noted that the distillery's goal is to maximize the extraction of flavours from both cask and spirit; while Cognac casks impart intensely rich flavours, aging too long can easily overpower Kilchoman's own spirit character. Because every cask matures at its own pace, the distillery had to bottle the whisky the moment the flavour balance reached perfection.
Core Range Recognized with International Awards
Alongside this new release, Kilchoman's core range has also garnered international acclaim. Its Rockside 11 claimed the highest "Master" award in the "Best Islay Whisky: Up to 12 Years" category, while Machir Bay, Sanaig, and Batch Strength each earned medals. Founded in 2005, Kilchoman was the first new distillery built on Islay in 124 years and continues to uphold the farm distillery model, growing and malting a portion of its own barley on-site.
