St Andrews Craftsmanship: The Perfect Blend of Amarone Casks and Light Peat

Located in St Andrews, Scotland, the Eden Mill distillery has announced the launch of its new single cask series, Distiller’s Cask Release #1. This is the first expression in a series of single malts personally selected by Head Distiller Scott Ferguson. This 8-year-old lightly peated whisky was matured in ex-Amarone wine casks from Northern Italy. the birth of this series marks the beginning of a new chapter, showcasing the distillery's precious inventory.

Rare Craftsmanship and Cask Strength Bottling

This whisky is made from 100% peated malt sourced from St Fergus in Aberdeenshire, Scotland, with a phenol content between 20 and 30 PPM. It is bottled at a cask strength of 53.2% ABV. In Eden Mill’s entire warehouse, peated spirit accounts for only about 5% (approximately 40 casks), and only two of those were filled into Amarone wine casks for maturation. Due to its rare production process, this batch yielded only 311 bottles, demonstrating exceptional exclusivity and value.

Tasting Notes: From Summer Bonfires to Dark Chocolate

Head Distiller Scott Ferguson noted that peated whisky is his personal passion, and he aimed to create a spirit that is both balanced and approachable. He describes the subtle smoke as reminiscent of a summer evening beach bonfire in St Andrews. The Amarone casks add depth, layering notes of black cherry and dark chocolate over the floral peat, with a palate of silky figs, sea salt, leather, and cigar, leading to a long finish.

Eden Mill has recently established a brand-new distillery and visitor center in Guardbridge, St Andrews, solidifying its position as a major producer of both whisky and gin. As a key part of the Fife whisky tourism landscape, the Distiller’s Cask series showcases the distillery's exploration of single cask maturation. This new release is now available through official channels and retail stores, offering a new choice for lovers of rare single cask whiskies.
