The Yamazaki Distillery is located at the intersection between Kyoto and Osaka—Oyamazaki. This is where three rivers (Katsura, Uji, and Kizu) meet. Due to the humid climate and high-quality water source provided by the confluence of rivers, it is known as the birthplace of Japanese whisky. In 1923, Suntory founder Shinjiro Torii built this legendary distillery with the dream of brewing an original whisky for Japanese people.
The uniqueness of Yamazaki whisky stems from its 'Tsukuriwake' (diversity in making). The distillery uses various shapes of stills and matures its spirits in diverse casks, including American White Oak, Spanish Sherry, and the rare Japanese Mizunara oak. Yamazaki NAS (Distiller's Reserve) is the epitome of this diversity. Mizunara oak is notoriously difficult to handle, but it imparts a mysterious 'Zen-like' aroma akin to incense or sandalwood, which has captivated whisky enthusiasts worldwide.
