Official tasting notes for reference:

Nose: Quite leafy and autumnal, with sage leaf, green cardamom, some bitter herbs - fernet, dried apricot, Robinsons barley water. Under dilution, the spirit becomes much fruiter, floral and vibrant - lillies, greengage, ripe plum, donut peach

Palate: Again, leafy with dried sage and thyme. Some soft stone fruits, a hint of bitter amaro. Dilution brings the white stone fruits and floral notes out, the dried herbs are still there but more refined and integrated.

Finish: Stone fruits continue, with gentle oak, vanilla and dried herbs. With water, there is some charred pineapple and sage.
