Official tasting notes for reference-

Nose Quite leafy and autumnal, with sage leaf, green cardamom, some bitter herbs - fernet, dried apricot, Robinsons barley water. Under dilution, the spirit becomes much fruiter, floral and vibrant - lillies, greengage, ripe plum, donut peach

Palate Again, leafy with dried sage and thyme. Some soft stone fruits, a hint of bitter amaro. Dilution brings the white stone fruits and floral notes out, the dried herbs are still there but more refined and integrated.

Finish Stone fruits continue, with gentle oak, vanilla and dried herbs. With water, there is some charred pineapple and sage.
