Product Details
This Single Malt New Pot 2026 is the first release from Tankyu Distillery since beginning production last year. Unaged and crystal clear, it presents the distillery's DNA in its purest form.
Led by master distiller David, the process uses a hammer mill and mash filter to extract pure malt aromas from floor-malted grain. It undergoes Tankyu's exclusive 192-hour two-stage fermentation—72 hours in temperature-controlled stainless steel, followed by 120 hours in wooden vats where lactobacillus and microbial colonies create complex esters. Distilled twice, the resulting spirit is rich in phenols and oils, signaling excellent potential for future maturation.

Tankyu Distillery's story began in Hong Kong. In 2018, Perfume Trees Gin gained international acclaim, and founders Kit Cheung and Joseph dreamt of building a physical distillery for Hong Kongers. However, land costs and regulations in Hong Kong halted their plans.
After searching across Asia, they were invited by JETRO to Hokkaido. Following three years of pandemic restrictions, they reached Higashikawa in 2023. Upon touching the crisp meltwater, all doubts vanished. Higashikawa relies entirely on groundwater from the Daisetsuzan peaks, "Heisei Famous Water" filtered through volcanic rock. Here, the Angel's Share remains at 4-5%, with cold winters preserving fruit notes and warm summers accelerating wood interaction.
To master these conditions, Kit invited David, a Taiwanese distiller trained at Scotland's Edradour, to lead. Using "Ice Steel" stills, David maximizes copper interaction. Tankyu is currently focusing on four cask types: Sherry Octave, Hogshead, Bourbon, and the soul of Japanese whisky, Mizunara—which requires 150-year-old Hokkaido timber to impart distinct sandalwood "Oriental Zen" notes.
Tankyu’s philosophy is "First and Only"—infusing Hong Kong flexibility with Japanese craftsmanship. They prioritize Hong Kong releases, breaking the industry norm of keeping the best for the home market. Their location at The Mills in Tsuen Wan hosts masterclasses and tastings, educating the public on terroir and craft. These Hong Kong distillers are writing a story of Hong Kong whisky, culture, and world-class quality in an international language.
