The name Kavalan is derived from the ancient name of the Yilan region. The distillery is situated in the Lanyang Plain, backed by the Central and Xueshan Mountain Ranges, blessed with pristine water sources. Kavalan Classic, as the brand's foundational work, challenged traditional perceptions in the whisky industry. In Scotland, whisky often takes decades to achieve mature complexity; however, in Taiwan, the high temperatures and humidity during summer significantly accelerate the interaction between the cask and the spirit—known as 'rapid maturation'.
This unique climate allows Kavalan Classic to extract abundant esters and tropical fruit flavors in a relatively short period. This whisky uses a blend of various oak casks, including the creamy vanilla notes from ex-Bourbon casks, the dried fruit layers from ex-Sherry casks, and the pure fruit characteristics from refill casks. This precise Art of Blending is strictly controlled by the distillery's professional team, ensuring consistent high quality in every bottle of Kavalan Classic.
