The spirit is first aged in American white oak bourbon casks for nine years, then half of the liquid is transferred to rare 30-year-old Matusalem Oloroso sherry casks for a final three years of maturation. The legend of the Dalmore distillery began in 1839 on the shores of the Cromarty Firth in the Scottish Highlands. The most striking symbol of the distillery - the '12-pointed Royal Stag' emblem on every bottle - dates back to 1263. At that time, an ancestor of Clan Mackenzie saved King Alexander III from a charging stag during a hunt. The King granted them the right to use the royal stag as their family crest. In 1867, the Mackenzie family took over Dalmore, and the stag became the symbol of Dalmore's quality and courage.

The distillery maintains an exclusive partnership of over 100 years with the renowned Spanish sherry house Gonzalez Byass, ensuring access to the highest quality Oloroso sherry casks.
