Manzanilla is produced similarly to Fino sherry, but it is aged in coastal cities where the climate is relatively cooler and more humid. Theoretical discourse suggests that this specific maritime climate imparts a distinctively salty tang to Manzanilla compared to Fino.

Nose
Balance of rich spice and sweetness, toffee, caramel and vanilla ice cream, hints of cherry and dark chocolate.
Palate
Salted caramel, toffee and cream, liquorice and star anise come through, along with brine notes and coffee and dark chocolate.
Finish
Lingering soft toffee/caramel sweetness, brine notes increase in balance with the coffee and chocolate notes, cinnamon and oak wood notes at the finish
