The Balvenie, located in the Speyside region of Scotland, is one of the very few distilleries that still maintains traditional handcrafted techniques. This 12 Years Old DoubleWood is a legendary expression, created in 1993 by Malt Master David C. Stewart MBE, who pioneered the 'finishing' technique in the whisky industry.
The distillery is best known for its 'Five Rare Crafts'. It still grows its own barley, utilizes traditional floor malting, and employs on-site coppersmiths and coopers to maintain its stills and casks—a rarity in modern whisky production.
The charm of DoubleWood lies in its precise timing. The liquid spends at least 12 years in traditional oak before a nine-month finish in Oloroso sherry casks, followed by three to four months in large oak tuns for marrying. This process ensures the whisky retains the warmth of bourbon barrels while gaining the depth of sherry casks, making it an essential flagship for any whisky lover.
