Highland single malt distillery **The Dalmore** has officially announced the addition of a new member to its core **Principal Collection**: **The Dalmore Aged 17 Years**. This new expression is designed to further explore the brand's exceptional expertise in **Sherry cask** maturation, showcasing its deep partnership with the renowned Jerez bodega, **González Byass**.

The Art of Finishing in Three Rare Sherry Casks

The maturation process begins in **American white oak ex-bourbon barrels**, establishing warm base notes of **Vanilla** and **Honey**. The liquid is then transferred into three rare and unique **Sherry casks** provided by **González Byass** for finishing. These three casks—**Amoroso**, the rare **Apostoles**, and **Matusalem Oloroso**—each infuse the whisky with distinct characteristics: **Apostoles** provides structure and savory complexity; **Amoroso** creates a harmonious balance between sweet and salt; and **Matusalem Oloroso** adds body and roundness.

Flavor Profile and Heritage

On the nose, **The Dalmore Aged 17 Years** offers aromas of **Seville orange**, rich **Orchard fruit**, and **Wood spice**. The palate reveals layers of **Poached pears**, **Forest berries**, **Sweet toffee**, and **Orange marmalade**. The finish carries notes of **Dark chocolate orange**, rich **Dried fruit**, and a long-lasting touch of cinnamon and nutmeg. Bottled at **42% ABV**, it is presented in the brand's iconic bottle adorned with the **12-point silver stag**, the symbol of **Clan Mackenzie**.

This new addition will sit alongside the **Principal Collection**'s legendary expressions, including **The Dalmore 12, 15, 18 Year Old**, and **King Alexander III**, continuing the brand's legacy.
