The leading distillery from Tasmania, Australia, Sullivans Cove, recently announced the launch of its newest Single Cask whisky: French Oak ex-Apera Single Cask TD0820. This 9-year-old whisky is limited to only 260 bottles, bottled at 47.6% ABV. Distilled in November 2015 and officially decanted in September 2025, it was matured entirely in a 225-liter French Oak ex-Apera cask.

This release showcases the close collaboration between the Tasmania-based distillery and the Australian fortified wine industry. Apera is the official name adopted by the Australian wine industry in 2010 for locally produced Sherry-style fortified wines, following an agreement with Spain and the EU. Sullivans Cove stated that their commitment to long-term maturation has remained unchanged since 1994, allowing them to consistently release some of Australia's most iconic high-age whiskies. Their core philosophy is to bottle "when the whisky is at its best," guided by liquid quality rather than a fixed schedule.

Official notes reveal an aroma dominated by rich citrus, including Chocolate Orange, Blood Orange, lemon, lime, candied fruits, Turkish Delight, and Treacle. The palate offers a full and slightly Waxy texture, evolving into Honeycomb, Rum and Raisin, Orange-Chocolates, Marmalade, Caramel, and cherry flavors.
