Tasmania's renowned distillery Sullivans Cove has officially unveiled its limited edition Navigator. This 16 Year Old Single Malt Whisky was matured entirely in American Oak casks and is scheduled for global release on May 8, 2026. Bottled at 47.2% ABV, Navigator was crafted from some of the oldest American Oak casks in the distillery's cellar, including select Refill Hogsheads and First-fill Ex-bourbon casks. With only 1,372 bottles available worldwide, it further showcases the distillery's excellence following its success at the 2026 World Whiskies Awards.

Maritime Inspiration and a New Chapter in Food Pairing

The name Navigator is inspired by Hobart's historic waterfront and the origins of the Sullivans Cove brand name, echoing the harbor's history as a hub for arrival and exchange. Moving away from the traditional positioning of whisky as an after-dinner drink, the distillery emphasizes the potential for food pairing. They aim to create a spirit that integrates into social occasions and dining moments, particularly complementing Tasmania’s rich seafood and premium produce, allowing whisky to reclaim its place in the conversation of lifestyle and gastronomy.

Rich Complexity and Professional Tasting Notes

Distillery Manager Heather Tillott stated that Navigator symbolizes a return to the distillery's whisky-making roots, emphasizing a full-bodied and complex profile. CEO Andy Gaunt mentioned the inspiration came from the founder witnessing Japanese whisky paired with abalone. Tasting notes describe lemon and orange zest, followed by vanilla cream, shortbread, and walnut, with a signature oily texture and a hint of sea salt. The distillery suggests pairing it with oysters, sashimi, or lobster. As a benchmark for Tasmania, Sullivans Cove continues to lead the international reputation of Australian Single Malt.
