Crafted by Master Blender David McCabe, this limited-edition Single Pot Still Irish Whiskey showcases the brand's historic connection with the fortified wines of the Iberian Peninsula.

This expression is finished in Moscatel wine casks sourced from the historic Bodegas Quitapenas in Málaga, southern Spain. This new addition expands on the Ex-Bourbon and Sherry Cask maturation styles central to the brand's core range, further exploring the possibilities of cask finishing.
Craft Details: A 16-Month Spanish Oak Finish
Regarding the process, the whiskey was initially matured in a combination of Ex-American Whiskey Casks and Spanish Oloroso Sherry Casks, before undergoing a final 16-month finishing period in Málaga Moscatel casks. Bottled at 46% ABV, this finishing period imparts an elegant citrus character to the spirit. This project was a collaboration between Midleton Distillery and Bodegas Quitapenas, founded in 1880.

Fifth-generation winery owners Marta Suárez Prieto and Víctor Suárez Onrubia oversaw the process. The European Oak Hogsheads were seasoned with Moscatel wine in Spain for two years before being shipped to Ireland to be filled with the specially selected Redbreast spirit.
Tasting Notes: Nectar, Citrus, and Pot Still Spices
Master Blender David McCabe noted that using Spanish Moscatel-seasoned casks is a tribute to the brand’s heritage of craftsmanship. Official tasting notes describe the whiskey opening with aromas of fresh orange, orange peel, and chamomile tea, accompanied by notes of nutmeg and cedarwood. The casks contribute Vanilla and floral honey aromas, balanced by the black pepper and clove layers typical of Pot Still Spices.
Marta Suárez Prieto added that the whiskey blends flavors of honey, dates, and caramelized fruit, reflecting a rich family history of winemaking. Redbreast’s Iberian Series has previously featured Lustau Sherry, Pedro Ximénez Sherry, and Tawny Port finishes, continuing to lead enthusiasts on a journey through diverse regional flavors.
